Chicken Brodo Soup with Noodles and Star Anise

It’s a bit late now, but I’m behind on posting so I’ll do it anyway… Happy New Year!

Things are quieting down now after the end of year storm and if you are anything like me, you ate a ton of everything you felt like enjoying with no restrictions or restraint, lol. Now, maybe you are feeling low and tired or even a bit sick and need some rest, recovery and healing food to reset your health. This soup is Pazzo Chow’s version of a soothing healthy “chicken noodle”.

INGREDIENTS

Chicken bones of a whole chicken (add a few beef bones if you have them and want to make more of a traditional “brodo (bone broth)” - you can also add chunks of chicken (there are examples below like this) but my favourite is a simple version with broth, pasta and green

1 Large cooking onion

1 Large carrot

1 Large celery stalk

6 Cloves of garlic

8-10 Star Anise’s

2-3 Tblsp Sea Salt

100g Egg Pasta (egg Papardelle ideally but any other egg pasta noodles work) *Make your own

1 Tblsp Soy Sauce

1 Tblsp Fish Sauce *optional

1 Small bunch Thai Basil and/or Watercress (the classic greens work too like cilantro and spring onion)

PROCESS

• In a large pot put the onion cut in half, the carrot cut in half, the celery, the garlic cloves halved, the bones and the Star Anise

• Add 4-5 Litres of water

• Add 2 tblsp of sea salt (I like to add the salt at the beginning because it helps pull out the juices from the bones and veggies faster while seasoning from the beginning - but you can season at the end if you prefer

• Bring to a rumbling low boil for approximately 1.5 hours until the broth takes on a tanned tone and it tastes deep enough without having lots too much water

• Take everything out except for the Star Anise

• Add the soya sauce and fish sauce

• Add pasta - usually egg noodles cook in about 2-3 minutes (fresh or dry) so I like to just put them in as is and let them cook in the soup - ratio is approximately 100g to 4L water

• Garnish with fresh leaves of Thai Basil and/or Watercress

• *Option to add Siracha / Sambal / Chili Oil for extra spice
