Tomato Lentil Soup

This soup is based on a family recipe from Maya’s roots. Everyone in Maya’s family made their own slightly unique version which inspired Maya to do the same with hers. This soup is delicious, nutritious and affordable - usually the origin of a super soup.

feeds 2-4 ppl

INGREDIENTS

1 cup dried green lentils
1 can (796ml) plum tomatoes
1.5 L water
3 large garlic cloves
1 small cooking onion
1/2 tsp
dried chili
2 tsp fine sea salt
2 tbsp
extra virgin olive oil

PROCESS

• Finely dice onion and garlic, add olive oil and chilli to the bottom of a soup pot to sweat on high heat

• Hand crush tomato add all contents in can including the juice to the pot

• Add dry lentils mix together on high heat for 2 mins

• Add water, stir, reduce heat to medium and let cook for approximately 40 mins until lentils are soft and broken up

• Drizzle with extra virgin olive oil and grated hard salty cheese (Parmggiano, Grana Padano, Pecorino) or light flake sea salt for a dairy free option
