Sundried Pesto

Made with sundried tomatoes, capers, olives, dates and chillies ~ Taste the sun in the middle of the winter with this Sicilian-inspired savoury-sweet-spicy nut-free pesto. It is best used with some pasta water, creating a silky, flavourful, vegan sauce. It’s extra delicious with a dusting of grated hard cheese like Pecorino, Grana Padano or Parmaggiano.
